it is too easy to eat unhealthy. There are so many prepared-foods, frozen dinners, boxed sides, etc. And pretty much all of them are stuffed to the brim with salt, many with sugar too. If you want less salt, you usually spend more on fancier brands.

I love the convenience of these foods, and they've been incredibly important for me throughout mental health disability. But mann its just too easy to eat this stuff. Cooking and stuff is just so much more work. And sometimes its more expensive too!

Idunner. I'm bored so I came to blog to kill time I guess.

I'm gonna cook tonight - tofu, zucchini, yellow squash, and a red pepper. Fake butter + olive oil, and probably some salt and pepper for a basic seasoning. Usually I season more, but simple sounds nice for this.

For a side ... probably frozen tater tots since I'm proper cooking the main dish.

I've shopped very differently yesterday than usual. I'm tired of running out of LINK (food stamps, welfare food money). I shopped deals, skipped frozen entrees for the most part, and got some sides other than tater tots.

P.S. I'm trying harder to eat healthy since I was diagnosed with Osteopenia at 32 years old (I'm still 32).

P.P.S. I added garlic powder and cumin and onion powder and crushed red pepper. i always add crushed red pepper. to EVERYTHING. It was very yummy. Might have used a little too much fat, thus causing me to need extra salt to make the flavors pop. Also I actually managed to brown the tofu! I always struggle with that. But I have a good nonstick now + I SQUEEZED tons of water out of the tofu. I'm typically less squeezy since I'm not usually making a scramble, but demolishing the tofu was fine for this dish. better than cubes, IMO, which was my original intention. Oh! And I used my sniffer to tell when the tofu was browning. Smell is so helpful!
